The DB is Daniel Boulud, a name to conjure with on the New York restaurant scene. The Bistro Moderne is his right-now interpretation of one of the new wave bistros springing up around Paris. The idea is that strong classical training creatively applied to American market ingredients, served in a comfortable atmosphere makes for a very nice dining experience indeed. Here the decor is vibrant, with red-rubbed walls and striking graphic floral prints in the front dining room and a more subtle palette in the rear. Here's an inside tip: the DB Burger kicked off the high-end burger wars in Manhattan. It's a sirloin burger filled with braised short ribs, foie gras and black truffles on parmesan bun with pommes either soufflees or frites. Known for fleet, knowledgeable waiters. A great destination in the Theatre District.
