You'll find Collage in Glasgow's Radisson SAS Hotel in Argyle Street. The name reflects the diversity of this lively restaurant's food, an eclectic mix of cuisines that takes you on a whistle-stop tour of Europe. Start with farmhouse pate on toasted brioche or the deeply savoury green pea soup, then go for spit-roast chicken or asparagus ravioli. Meat is treated respectfully: both rib-eye and sirloin steaks are hung for 21 days, and the result is richly-flavoured beef that's definitely a cut above. A Collage speciality is its range of one-plate dishes - Italian, French, Greek and Spanish, the latter piled with jamon, olives, chorizo, tortilla, manchego and tomato salad. The short but tempting dessert menu includes cranachan, a traditional Scottish pudding that mixes whisky and cream with oatmeal. Try it - it might sound strange but it's awesome.
