The Edwardian former HQ of the Department of Education Office in Glasgow's art district is today home to one of the ABode group of boutique hotels. Its airy, stylish street-level restaurant is the domain of Michelin star-winning restaurateur Michael Caines, much-admired for working closely with local suppliers, chefs and front-of-house staff to ensure each of his operations fully reflects the character of its community, its terroir, if you will. So here in Glasgow, a typical starter might be pumpkin and wild mushroom risotto with mascarpone. Caine's creativity shines brighter still in mains such as Aberdeen Angus beef fillet in a red wine sauce topped with choux farci, and roast sea bass with cod brandade.
