Pintxo People brings a brilliant slice of metropolitan dining to Brighton. Downstairs is a rustic bar and deli selling the Basque bite-size tapas after which the place is named. Upstairs is a glossy dining room of red banquettes, slate-grey walls and a Catalan sensibility. The typically British formality of starters and mains is replaced with the more sociable tapas; everyone tucks in. Prime ingredients, AA rosette-winning cooking and an experimental itch make for a very happy marriage. Try the acorn-fed Iberico ham, ox sirloin or fried cheese ravioli to taste what we mean. Puddings provide a spectacular ending. And by the way, it's pronounced 'pincho'.
