Opus 504 restaurant in Edinburgh's Macdonald Holyrood Hotel already had a prime location opposite the Scottish Parliament building and a few minutes' stroll from the city's best shopping and tourist destinations. Now the restaurant has been decorated with an AA rosette and is aiming for another. This is a civilized environment, with calm, neutral colours, tartan carpets, thick drapes, paneled columns and gleaming white linens. Opus 504 refers to the number of hours the naturally-reared Scottish beef is hung before serving in four cuts. Fresh wild fish is delivered daily. Signature dish is pan-seared West Coast scallops with minted pea puree. The proudly Scottish service is impeccable.
