Wedgwood restaurant is a oasis of restrained elegance amidst the tide of tartan that lines the Royal Mile - tourists and locals fall on it with cries of gratitude. Lisa Channon manages the front-of-house with warm élan while partner, chef Paul Wedgwood, constructs his inventive modern Scottish dishes. Wedgwood's signature dishes include fillet of lamb rolled in couscous, pistachio and black onion seed on gingered sweet potato puree with cardamom cream sauce and diver-caught king scallops in caul fat on a bed of haggis with grain mustard and pepper sauce. Blistering wine list, spiffy service, seasonally changing menu, great experience.
