Vin et Maree Voltaire restaurant in Paris' just a few steps from the Place de la Nation on the Boulevard Voltaire is dedicated to the two items in its name: wine and seafood full stop. First of all, the freshness of the seafood is impeccable. With long-standing relationships with small boat fishermen in the Atlantic, North Sea and the Mediterranean, the most recently-caught seasonal fish are always on the menu. Which means that in stormy weather, certain fish may disappear from the carte for a day or two. Now that's freshness. Preparation is as simple as can be with a minimum of adornment so the piscatorial flavours shine through. The wines tend toward fruity and dry whites to complement the mains. Décor, too, tends toward the simple and the marine-themed and the whole experience is delicious and reasonable on the pocket for such high quality.
