Casa Bini restaurant in Paris is the life work of Anna Bini, an Italian who determined nearly twenty years ago to show Paris diners what Italian cuisine truly is, particularly the cooking of that little slice of culinary heaven that is Tuscany. The authentic Tuscan interior hasn't changed a jot. There are wooden chairs and tables, rustic terra cotta tiles, a pair of olive trees, peasanty antiques, exposed beams and an air of warm, convivial welcome. The specialty, carpaccio, has been on the menu since Casa Bini first opened its doors, and is now served a dozen different ways. There are about fifteen daily dishes divided among the courses - including fresh pasta, of course, in dishes like tagliolini with white truffles. The wine list is particularly strong on Brunellos and Chiantis, with a very commendable one available by the carafe.
